Last week I tried something new for dinner and Sir Husband liked it so much I decided it was worthy of sharing! However, a word of warning: if you’re not fantastic with spicy food (like me) don’t put quite as much curry paste in as I did 😄
I found this recipe in a random food magazine from 2009. I think it was Recipes+, but I’m not 100% sure on that.

I have been trying hard lately to inject some different dinner ideas into my repertoire. I have been reading the New Zealand Healthy Food Guide like mad trying to get some inspiration. One of the latest recipes I gave a go was Bagel Pizza Melts.
They are super easy to make and are super yummy! It turned out so well I thought I would share the recipe with you. I did alter it a little to suit what a like, so I reckon you could also things like bacon, etc to it too.
Today I have for you a very quick and delicious dinner idea! When I’m feeling a bit lazy or busy (as I usually am), cooking dinner always seems like such a chore, and my lads don’t have a clue how to cook (Brother-In-Law once messed up re-heating frozen chicken patties). However, my home-crumbed pork schnitzel is a simple and delicious meal that is just that little bit more special than the store-bought crumbed stuff (blech!). I forgot to take many photos unfortunately, but I’m sure you’ll all survive.
For my very first solo post, I will be presenting you with my quick, easy, and oh-so-well-received butter chicken recipe. Now this ain’t no pre-made sauce icky rubbish! This is… THE REAL THING. I figure that we have to start off the real posting sometime, may as well start with a recipe for tonight’s dinner!
I never actually measure out how much I use of stuff, so just play around with it until you find what works for your taste. I will give some vague indications…
- Chicken breast – one large breast can feed 2 people, I use 2 breasts because I feed 2 ravenous lads in addition to myself.
- 1/2 cup uncooked white rice per person, cooked to however you like it! Since this is a “quick” recipe, I’m going to admit that I do it in the microwave.
- 1 tsp (that’s a TEASPOON) turmeric
- 1 tsp ginger
- 1 tsp cinnamon
- 1 tsp chilli seasoning
- 1 tsp garam masala
- 1 tsp salt
- 1 tbsp (that’s a TABLESPOON) butter
- 1 tbsp minced garlic
- About 3/4 of a 500ml bottle of cream
- Around 3 or 4 tbsp of tomato paste
