Bagel Pizza Melts

11 Sep

I have been trying hard lately to inject some different dinner ideas into my repertoire. I have been reading the New Zealand Healthy Food Guide like mad trying to get some inspiration. One of the latest recipes I gave a go was Bagel Pizza Melts.

They are super easy to make and are super yummy! It turned out so well I thought I would share the recipe with you. I did alter it a little to suit what a like, so I reckon you could also things like bacon, etc to it too.

You will need:

  • 300grams of beef mince
  • Cooking Spray
  • Capsicum (colour does not matter), diced
  • Onion, diced
  • 1 1/2 Tbs Tomato Paste
  • 1 tsp Tuscan seasoning
  • 2/3 Cup Passata (also known as tomato puree)
  • 4 Bagels
  • Mozzarella Cheese
This is enough to make sure two and a half bagels for Gabby and one and a half for me.
1. Mix in a jug the Tomato Paste, Passta, Tuscan seasoning, onion.
2. Brown Mince and then add mixture from jug and stir.
3. Simmer away until everything is cooked through.
4.Turn the mince mix right down to keep it warm.
5. Cut the bagels in half and put under the grill. Only grill the cut side.
6. Once they are all nice and toasted put some of the mince mix on top with mozzarella then return to the grill.
7. When the cheese is melted to your liking remove from the grill (turn the oven off) top with BBQ sauce and enjoy!

Looks really good – too bad cheese and me don’t mix too well :o( I have done something similar for the nephews with mini garlic pita pockets with some diced salami and a little bit of cheese – so easy to make and really easy to eat, and the best part is because it’s all finger food you don’t have lots of plates to wash afterwards.

Pita pocket pizzas are amazing! I’m sure these would be just as tasty without cheese too 🙂 Definitely agree about the lack of dishes being a major positive with finger foods 😉
